Refresh my memory about zucchini...

Is it true that the small ones are good for making bars and breads and the big ones for sauteeing? (sorry I butchered that word)

Any recipes you love would be great! Thanks!

Re: Refresh my memory about zucchini...

  • I thought it was the other way around. maybe. I usually grill them.

  • Flip that around. The smaller, the more tender.  Larger are great in soups, breads, faux apple pies and for stuffing!  I find that any size are great on the grill though.

Small ones are the best for sauteing, stir fries, etc. because they have small seeds and are tender.  Zucs get bitter and hard as tehy det bigger.
  • I have frozen 8 quarts of them already and had a couple small and medium ones in the fridge.

A couple days ago I had grilled a summer squash with parmesan cheese, garlic, and lemon pepper. It was great, but next time I will pry skin them. The skins were kind of hard.
