Kale

Anyone have a good Kale recipe to share?

I found this one, but to me it sounds absolutely disgusting.

Granted, I've never had Kale or cooked with it, but I'm imagining this would taste like crispy toasted lettuce.  Am I wrong?

  • I've made this recipe and it was really good.  Raw kale isn't as tasty as cooked kale.  And remember to remove the stem portion of the kale because it has a woodsy taste.  Oh, and I added bacon to the recipe below (because everything is better with bacon!)  You could also omit the bacon and add goat cheese and some lemon instead (a healthier alternative).

    Ingredients

    • 1 1/2 pounds young kale, leaves coarsely chopped
    • 3 tablespoons olive oil
    • 2 cloves garlic, finely sliced
    • 1/2 cup vegetable stock or water
    • Salt and pepper
    • 2 tablespoons red wine vinegar

    Directions

    Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.

  • I tried making kale chips and the did not work. I had them once before and the green leafy flavor is strong but it grew on my after the first couple chips. 

    My favorite way to cook and leafy green is as follows: 

    1.  Heat a non-stick skillet on medium high.

    2.  Wash greens and do not dry. 

    3.  Quickly cut then toss into the hot skillet. 

    4.  Cover and let steam for 3-5 minutes, until just wilted.

    5.  Sprinkle with sesame seeds and sesame chili oil, toss and serve!
