Anyone want to talk about salads?
I feel like Mike and I are in a salad rut. We almost always have a small salad with dinner, and it's always the same basic stuff: lettuce, tomatoes, bell peppers, cheese. Sometimes we'll throw in some beans or pine nuts, if we're feelin' crazy. He usually adds carrots to his, but I'm not a fan of raw carrots. I'm also not a fan of cucumbers (weird, I know).
Sooooo... what do you put in your salads? I need some inspiration.

Sometimes in the summer we like to switch things up so we will make a baby spinach salad with mandarin oranges and sliced strawberries with a poppy seed dressing... it is on the way sweet side but pretty tasty and refreshing
We will do salads with spinach, candies pecans/walnuts, pears or green apples with balsamic vinegarette. I also make one with cucumbers, tomato, red onion, red wine vinegar and feta cheese. You can also put lentils in it to strech it.
ETA: just noticed that you don't like cucumbers. Sorry.
My basic salad is a mix of romaine lettuce and spring mix, tomatoes, red onions, parm cheese and my homemade dressing. Sometimes I'll add some sort of nuts to mine but DH hates nuts on salads.
I also do a caesar salad of romaine lettuce, tomatoes, red onions, croutons and caesar dressing.
Another one is lettuce, tomatoes, red onions, cucumbers (but you could leave them out), cheddar cheese, avocados, croutons, ranch dressing.
I also do a spring mix with gorgonzola cheese, apples or pears, candied walnuts and a balsamic vinegrette - so yummy!
I seriously love salad and practically eat it every.single.day. People at work laugh because every day I pull out a salad...I'm so predictable haha.

I'm the same way! And I loooove fruit.The amount of produce we go through in a week is pure insanity. Great idea on the caesar salad! I love ordering those when I'm out at a restaurant, but never think to make them at home. I think I need to throw some croutons into the rotation. That might give me the extra crunch I'm looking for.
This made me think of a cobb salad and now I want one reallllyyyyy bad!

Mmm cobb salad! Although I will tell you, I had a cobb salad a while ago that had a balsamic dressing and it SUCKED. IMO cobb calls for creamy deliciousness!
I, too, am boring with my salad creations; you just don't mess perfection (lol).
I'm all about the romaine, iceberg, grated zucchini, sliced mushroom, and ranch.

This. I usually put fruit in my salad, mainly strawberries and mandarin oranges and blueberries. I use Balsamic Vinegar for my dressing, not vinegarette, just the straight vinegar. Although poppy seed sounds yummy!
Oh wow, that DOES sound good. I might have to make one for lunch one day this week. mmmmmm.
I don't like cucumbers either, don't feel weird.
I like spinach or butter lettuce, dried cranberries, parmesan cheese, candied walnuts, and these corn bread croutons they have at Fry's sometimes.
I can't ever get sick of that combo. I eat ceasar salads all the time at work so I like a change. I just change the dressing, sometimes strawberry vinaigrette, olive oil and balsamic vinegar, or just plain ranch.

Corn bread croutons? That sounds awesome. Do you know what brand they are? I might need to search them out.
Oh the poppy seed dressing is sooo good, I think. it is way sweeter though not tangy at all like vinegar or vinegarette
I don't know what brand they are but they usually have them at Frys in the bags of croutons hanging above the salads in the produce section. They're really good. I've eaten them by themselves before...ok a lot.
Next time I see them I'll get the brand for you.

We had salads for dinner thanks to you lol. We also got a rotisserie chicken and used that in them too, it was great.
