I think a good brunch has a mix of savory and sweet.
Savory: eggs (people love this quiche when I make it), bacon/sausage, hashbrowns/potatoes
Sweet: danish/doughnuts, fruit, mimosas

I like a mix of salty and sweet too, with things that aren't so "breakfast" like - I've experimented with mini quiches, goat cheese stuffed sausage balls, prosciutto wrapped figs, unusual muffins (blackberry cheddar, chocolate chip walnut) or scones, and unusual fruit - think in season, like orange-pomegranate salad for early winter, for example, or right now a melon, citrus and strawberry tray would be delicious!
Individual crustless quiche (cooked in muffin pans...so good!), assorted cheeses, assorted fruit, mini bagels and flavored cream cheeses, mini muffins, french toast casserole and sausage. I love mimosas too!
I hosted a brunch the morning of my BFF's wedding. The menu was:
-As assortment of quiches. I think I had a southwestern one; ham and cheese; mushroom and cheese; broccoli and cheddar
-Fruit salad
-Mini bagels with cream cheese and lox (these were a big hit)
-Something sweet but I'm forgetting what...I think blueberry muffins
-Lots and lots of coffee, juice and mimosas!
The great thing about this was that the muffins and quiches could be made and frozen in advance and I tossed the fruit salad together the night before and assembled the bagels in the AM. It was great because of all the pre-wedding festivities (including the bride and 2 bridesmaids sleeping over the night before the wedding.)
