Alright ladies, last night I made something verrrrrrrrrry strange for dinner, and I somehow forgot to bring it up today.
Have you ever had a stromboli? You know that pepperoni & cheese/broccoli & cheese bread?
Ya well, last night, I made a Mexican Stromboli.
Taco meat, cheese, cilantro, and scallions. Dunked in salsa and sour cream.
Now before you , listen to me when I say that this strange creation was heavenly

He got mad when I wouldn't eat that for dinner.

Hmmm....recipe? lol
I just rolled a bunch of non-sense in some pizza dough. But here goes:
1 bag fresh & easy pizza dough
1 lb. ground beef, browned w/ taco seasoning mixed in
2 C. colby jack cheese, shredded
Cilantro, enough to cover your stromboli "log"
Scallions, ^same
Cover counter w/ lots of flour, roll the pizza dough into the shape of a cookie sheet (but not too, too thin).
Spoon meat into center of dough and form a row length-wise.
Cover meat with other toppings (feel free to add anything else you usually throw in with tacos/nachos)
Fold over sides, so you're staring at a stromboli log. Recruit your DH to scoop up one end, you grab the other end, and transfer to the cookie sheet.
Put a couple of slits in the top, and coat with an egg wash.
Bake at 350 degrees, on the top rack, for 25-30 minutes. (I finished mine under the broiler for a little less than two minutes, for some color)
Cut into strips and dunk into salsa, guac, sour cream, or whatevs.
Can't wait to meet my baby boy!
I will now be making this for dinner tonight.
