What to do with all these tomatoes?!

I planted my first garden this year, and I will soon have lots of tomatoes.  What are some of your favorite things you make with your garden tomatoes?

  • Salsa, chicken bruschetta, tomato and mozzarella salad, tomato and cucumber salad are all big time favorites at my house during the summer.

    How about some margarita pizza?

  • I just made my favorite tomato dish last night with our home grown cherry tomatoes.  In a frying pan, heat up some extra virgin olive oil and brown some chopped garlic and onions to your liking.  Toss in some cubed chicken, and then when they're cooked through, toss in a bunch of cherry tomatoes (a good 2-3 cups).  Put a lid on the pan for about 5-7 minutes so the tomatoes start "exploding"- push them down with a spoon after about7 minutes if they haven't exploded yet.  In the meantime, cook some penne pasta and drain.  After the tomatoes have exploded, dump the drained penne into the frying pan with the chicken and tomoatoes and stir everything up.  Turn off the heat and add some chopped arugula.  After it sits for a minute or two, remove from the pan.  As you pour into your casserole or serving dish, blend in some freshly shredded parmagiane cheese (i use a ton!).  I LOVE this dish with some fresh italian bread!

     All of this, plus sharing with friends/family/neighbors - everyone loves fresh, home grown tomatoes!

  • Tomato tarts with fresh pesto and cheese! Mmmm...
  • Make sauce and freeze or can!  Or, dry some...you'll have them around all year!
  • My first few never make it past rinse, slice, and eat.

    After that we make a lot of fresh salads.

    Now I've started canning.  Salsa, marinara sauce, canned tomatoes, really anything.

  • I had this 'problem' last year.

    The cherry tomatoes never made it past the family to do anything with.

    We did fresh tomato bruschetta, tons of salads (caprese was my favorite), some homemade tomato sauces for pasta (double & freeze the extra)

    I tried making & canning salsa (but used a bad recipe) for the large Beefeater & Better Boy tomatoes. 

    I made "Sun-Dried" (actually oven-dried) tomatoes with the Julienne tomatoes & they came out fantastic.  

    Romas / other plum-type tomatoes:  Parboiled, freeze on cookie sheets (using wax paper) then keep for sauces later

    Thanks for all the good ideas!  Mmm, this post made me hungry!  Now I can't wait until my tomatoes are ready to pick!
