Family dinner menu critique pls.
My grandmother is coming to visit and stay with my parents for a few days. My Mom was discussing a menu with me, and trying to come up with what to have exactly. Here's what we have come up with so far:
BBQ Chicken
Ribs
Macaroni Salad
Green Beans
What else should we serve?
I wanted to do Arnold Palmers for drinks, and then a dessert (but not sure what).

Hi! Love the menu... here are a few side suggestions:
Would only choose 2 of these:
Green Salad
Cucumber Salad
Corn on Cob or Fresh Corn Salad
Tomato-Mozzarella-Basil Salad
Fresh Fruit Salad or Sliced Watermelon with your Dessert

For dessert you could always do some kind of fruit compote with a pound cake or individual lemon tarts or something like that.

That sounds really good. My aunt loves bbq chicken and serves it often. Most recently, she served with potato salad, green salad, cornbread. I think pp's suggestion of corn is a great way to go.
Any fruit pie would be good and/or brownies.

I'd add a green salad & love the idea of corn or fruit like melon. For dessert, how about strawberry shortcake?
The cucumber salad sounds great, and something with corn might be good too. If you have a cucumber salad recipe you love, let me know!
Still havent decided on dessert, but something fruit (peach maybe?) and light does sound delicious like you ladies have suggested. Thank you so much for all of your help, I might be back
Cucumber Salad
Ingredients:
3 Cucumbers, peeled and sliced
1 Tablespoon Coarse Kosher Salt
1/2 Cup Distilled White Vinegar
1/4 Cup finely chopped Dill
3 Tablespoons of Sugar
1/2 Teaspoon freshly ground Pepper
Place cucumber slices in colander. Sprinkle with salt and toss to coat. Let stand 15 minutes, stirring occassionaly. Meanwhile, for dressing, stir vinegar, dill, sugar and pepper in large bowl until sugar is dissolved. Drain cucumbers, pat dry, Add cucumbers to dressing and stir to blend. Refrigerate at least 15 minutes. (Adaped from Anna Pump's cook book Summer on a Plate).
