Healthy lunches & snacks

I've been in a total lunch rut. I usually bring my lunch to work since it is cheaper than buying. But I'm so sick for the normal "routine". I usually bring fruit for breakfast, a sandwich (turkey, tuna, or PBJ) or pasta or salad for lunch, and a yogurt or granola bar if I get hungry in the afternoon.

What are your lunch favorites?

What kinda of bread/wrap/etc do you use for sandwiches?

What's your favorite snack(s) to have at work? At home?

  • I have always liked variety myself.

    I like veggie and hummus wraps. Use a whole wheat or spinach tortilla, spread with hummus and top with your fave sliced veggies and cheese (if desired).

    I was always a lean cuisine girl, but have eaten a lot less of those in the past few years because I won't eat meat out of a box, the asian dishes stink too much, and I get bored with the pasta.

    I love the Pepperidge Farm soft wheat bread. I always have that on hand for toast, grilled cheese, etc. 

    Snacks- whole wheat goldfish in cheddar, dried fruit, string cheese, trail mix (I like the planter's varieties, like the Omega-3 mix), or hell, candy/popsicles work too now and then. 

     

     

  • I bring my lunch everyday too and the same old thing definitely gets boring!

     I do weight watchers which I have found some good recipes and stuff on. I eat turkey and veggie sandwiches a lot. And I like making chicken salad (I have a good weight watchers one that's a little healthy... I can send to you!) a lot because I can make it on Sunday and have it 2-3 times during the week already made. I like salad, but without the lettuce, or not a lot of lettuce.. haha. I like to mix a bunch of veggies (tomatoes, peppers, pea pods, cucumber, broccoli), feta cheese and some almonds with a little olive oil and red wine vinegar. And sometimes if I don't feel like making anything, I will bring an english muffin to toast and put a slice of cheese and tomatoes inside to make a little sandwich melt :)

     I like using whole wheat pitas, fiber one sliced bread or just whole wheat/multigrain bread.

     For snacks... I eat a ton of fruit. Or I buy the Light & fit yogurt and mix on some plain special K cereal. I like the laughing cow cheese wedges with carrots, celery, pretzels or crackers :)

    Phew that was a lot... I have gone through the lunch rut twice already this year!

  • I hate lunch ruts.  I have been bad with food lately, but when I am eating healthy this is what I do:

    What are your lunch favorites?  Salad with grilled chicken.  I always dread chopping up all of the veggies on Sunday nights though, so I splurge and buy bagged baby spinach and cherry tomatoes.  Then I usually just have to do a quick cucumber or two and maybe a green pepper.  I grill or bake a bunch of chicken with a spice rub of salt, pepper, onion powder, garlic powder, and chili powder.  Sometimes I add some cheese on the salad, and I eat it with light italian dressing. 

    When I'm not doing this, my lunch is usually just leftovers from dinner.  I try to keep the portions reasonable.

    What kinda of bread/wrap/etc do you use for sandwiches? I just use regular hamburger rolls usually.  I am cheap and don't go the super light or healthy route on this.

    What's your favorite snack(s) to have at work? At home? At work I have a Dannon Light n Fit yogurt every day.  I bring an apple for an afternoon snack.  I have been bringing grapes this week and they are delicious.

    At home I have been eating Minute Maid fruit popsicles.  I forget the real name of them but they come in lemonade, raspberry lemonade, limeade, and cherry limeade flavors.  They are like 70 calories and so nice and cold in this hot weather.  I usually have one when I get home from work before I get ready to go work out or do whatever else before dinner.  Another treat I have been making is light cool whip with sliced strawberries.  Yum.  Also I have been making myself a lot of iced tea this summer.  It is good for when I want a snack but know I shouldn't actually be eating anything and am just bored.  I don't put any sugar in but do squeeze a lemon slice into it. 

  • I forgot to suggest fruit leather. Not fruit roll ups (holy corn syrup batman) but the stuff from TJ's or Whole Foods that is healthier. The problem is, they are small so I end up eating 1/2 the box.

  • I eat Cedarlane organic low fat burritos a ton.  That is my go to lunch.  Other times it is hummus and crackers, or turkey sandwiches.

  • When I am at work I tend to snack more throughout the day rather than eating one big lunch, but I do like humus and veggie sandwiches or roll ups (just tried Sabra Chipotle humus...it's pretty spicy but good in a sandwich!).  I also eat greek yogurt with fruit and sometimes granola or cereal a lot!  For snacks I eat a lot of fruit too, and I usually make my own trail mix with peanuts, almonds, dried cranberries, raisins, whatever I have in the kitchen!  I sometimes bring cereal for snacks too, like frosted mini wheats or Puffins cereal, but I have to portion it out pretty carefully so I don't eat a whole box in one sitting!

     I should try to incorporate more veggies though!  That is always a struggle for me!

    Her lunches always look delicious, colorful and healthy.  I'm not a vegetarian, but there are a lot of wraps/sandwiches she packs that you could just add chicken too.

    I'm usually worse about eating in the winter, I try to take advantage of Farmers Markets in the summer.  I may even get brave and try canning my own stuff this year, I think that's been inspired by all my lurking on the Green Living board.

    I was just going to suggest this too. I am a vegetarian and I LOVE this blog!! She's a walking advertisement for the Bento Box lunchboxes, too. I really want one. :)

    I was just going to suggest this too. I am a vegetarian and I LOVE this blog!! She's a walking advertisement for the Bento Box lunchboxes, too. I really want one. :) 

    She totally is!  I wanted to get one when I first read her blog a little while ago, but the ones she uses are like $25 each, um no thank you!  However, I saw them at Whole Foods on sale one day and snatched one up, and like it so far.
