enchilada recipe?

I've had a killer craving lately for either chicken or beef enchiladas... but have never made them myself. I'm not big on chillis or peppers, but can use a recipe with them as long as it has enough flavor that I could leave them out.

Anyone have a good recipe they'd like to share?

  • You know, I've had all the ingredients for enchiladas in the cupboard for months and have yet to make them....I don't have a real recipe though I just do what the sauce container says...so I'm not much help.  Just wanted to say that your post actually make me want to make them now too! :-)

  • funny you should ask! today's recipe on pioneer woman cooks is enchiladas :) although i havent tried this one, she's never steered me wrong...

  • I make chicken enchiladas ..really easy.

    I add one can of enchilada sauce to one can tomato sauce. Mix about a third of  that in with some shredded chicken. Roll some chicken and some shredded cheese in a tortilla. Place seam down in a baking dish. Pour the rest of the sauce over the top and top with more cheese. Bake at 350 until hot and all the cheese is melted ( about 25 minutes) I usually put chilies in with the chicken, but you don't have to.. the enchilada sauce has a bit of kick to it by itself.
