So the tradition in the Episcopalian church is for a child to have two godmothers and one godfather if a girl and two godfathers and one godmother if a boy. Without a doubt, we are going to ask my bff and SIL to be the godmothers but we don't have any male friends who we feel are suitable at all. DH's friends are either not Christian or we just don't feel like they would take it seriously enough and this is important to us. I guess what I'm saying, is do you think it would be ok just to have 2 godmothers and no godfather? I'm sure it will be a question for the priest who performs the baptism but it's something weighing on my mind right now.
Re: Godparents
I think it's definitely a question for the priest. I think that in the Catholic church, you really need both. It can be a relative, right? So what about your brother or an uncle or cousin or something?
I'm going to have issues choosing godparents when the time comes, too.

What about your dad? I know it would be unconventional but at least you would have someone you are close to. Or would the IL's totally flip?
Does it really matter if your brother is religious? My brother isnt religious but he will be godfather for #2. Does he have the same beliefs as you? That (as far as I can recall) is the role of the godparent, to help you raise the child in the faith.

I think your dad is a great idea. I'm sure he would be honored.
My kids aren't baptized, but they do have a godmother or 'nanny' as we call them. They don't have a "Paran" or godfather b/c all the men in our life suck. o'well!
