Good ides so far.

If they like to cook, you could get them a nice bamboo cutting board and a quality knife with a sharpener. While a knife doesn't sound very eco friendly, buying a quality one and a sharpener will save loads of metal from being needed. (And mining is about an un-eco-friendly as it gets.)

In addition to some other kitchen stuff, maybe some organic cotton cloth napkins?  Make them an everyday type so they can take the place of paper napkins (versus nicer ones they would only use for fancy dinners).
