Good ides so far.
If they like to cook, you could get them a nice bamboo cutting board and a quality knife with a sharpener. While a knife doesn't sound very eco friendly, buying a quality one and a sharpener will save loads of metal from being needed. (And mining is about an un-eco-friendly as it gets.)
