Its too hot - what is for dinner?!

We're having a ridiculous heat wave here in MN and have been in the 90s with tropical humidity for a good solid week.  It is too hot outside to grill and it is too hot inside to turn the oven on.  We have the A/C on but our utility provider has a "savers switch" that cycles the A/C on and off during peak demand times and I'm afraid that if we turn the oven on for any length of time, the house will warm up and the A/C won't be able to catch up because it is being cycled on and off by the energy company.  I get crabby if I don't sleep well.  Hot house = crabby Wittyschaffy. 

Whats for dinner that doesn't involve the oven??  The only thing I can think of is BLTs but that involves the toaster (which throws some heat) and cooking bacon.  (although I suppose I could use the microwave for that).  Hubster isn't huge on salads.  

Have any inspiration for me?!  and p.s. Bring on fall.  I'm ready for it!

  • Frozen yogurt and doritos?

    Could you stop by the store and grab cold cuts and artisanal (sp) bread that doesn't have to be toasted?  Maybe cold soups are an option like melon or gazpacho.  I'm not much help as we're still doing everything as usual--but we have the advantage zero brownouts (at this point, at least).  Sorry :(

  • What DH and I do for hot day dinners is a salad. We put cold cooked chicken (cut into cubes or shredded), apples, chopped pecans or walnuts, blue or goat cheese, maybe some roasted beets, on top of some mixed baby greens and a good balsamic vinaigrette. It always helps to keep us (and the house) cool. :)
