Yeah, I totally missed last week again.  Whoops!

This week... Post your favorite side dish recipes!   Veggies, potatoes, salads, whatever.

  • This is one of my most famous recipes!

    Cowboy Caviar

    3 Tbsp. Red Wine Vinegar

    3 Tsp. Hot Sauce (I use Frank's Red Hot)

    2 Tsp. Salad Oil

    1 clove garlic, minced

    1/8 Tsp. Pepper

    1 Firm Avocado, cut in small cubes

    1 Can Black-eye peas

    1 Can corn

    2/3 cup green onions, thinly sliced

    2/3 cup fresh cilantro, chopped

    1/2 lb. Roma tomatoes, chopped

    1 bag tortilla chips

    In a large bowl, mix vinegar, hot sauce, oil, garlic, pepper and avocado.  Gently mix.  Drain and rinse peas and corn.  Gently mix in peas, corn, onions, cilantro, and tomatoes to vinegar mixture.  Add salt to taste.  Service with chips.

    **I usually end up adding a little more vinegar and pepper and I usually do 2 avocados because I love them :)

  • Ok, I have the BEST Goat Cheese Guacomole recipe that I stole from the resort I used to work at!  It is always a big hit!

    8oz Goat Cheese

    2 Avocados

    2 Anaheim Chilies,roasted, peeled and seeded

    1/2 tbsp roasted garlic

    1 lime, juice of

    Kosher salt and ground pepper (to taste)

    Cilantro (to taste)

    1. Combine goat cheese and avocado into the bowl of a food processor.  Chop chillies coarsly and add to the bowl with garlic and lime juice.

    2. Add cilantro, season with salt and pepper

    3. Mix in food processor

    4. Enjoy

  • Ok, I have another one!

    Sweet Potato Fondue (goes great as a side to pork chops)

    1 Sweet Potato

    1 Whole Shallot, cleaned

    1 Garlic Clove

    12oz of Milk

    4oz Heavy Cream

    1/2oz Ginger

    1 tbsp Honey

    2 Tbsp Marscapone Cheese

    1. Cut sweet potato into small pieces and put into a pot with all other ingredients except for honey and marscapone.  Bring to a boil.

    2. Turn down heat and let ingredients simmer for 10-12 minutes. Drain.

    3. Puree ingredients until smooth.  Let sit for a few minutes

    4.Season with honey and marscapone (salt and pepper to taste if needed).

  • Oven Roasted Potatoes

    Ingredients

    • 1/8 cup olive oil
    • 1 tablespoon minced garlic
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried marjoram
    • 1/2 teaspoon dried dill weed
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried parsley
    • 1/2 teaspoon crushed red pepper flakes
    • 1/2 teaspoon salt
    • 4 large potatoes, peeled and cubed

    Directions

    1. Preheat oven to 425 degrees F
    2. In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
    3. Roast for 30-40 minutes in the preheated oven, turning occasionally to brown on all sides
