Need ideas

I am in a dinner rut. I also do the same thing over and over each week. Mainly dealing with chicken. I want to start using my crockpot since I don't have to do any cooking when I get home. I have a cookbook just for crockpot cooking but alot of those have prep work that you need to do before hand (like cooking the meat). I like to be able to get up and throw everything together (I don't mind chopping veggies though) and go.

Does anyone have any new crockpot recipes?

  • One of my favorites and easiest recipes is to put chicken breasts in your crockpot (however many you want) and the cover with Italian dressing and that is it (for the initial part).  The cooking time will vary on how long you will be away and how many you put in there.  I usually do low for 8 hours and then it will kick over to warm.  It makes delicious chicken.  I usually cook a bag of instant brown rice and add half the bag to the crockpot about 30 minutes before dinner to simmer in the dressing.  To serve I put the non-Italian rice on a plate and put the Italian rice and chicken on top.  Some friends of ours like to put all the rice in the crockpot; we prefer the rice to be not as strong.

    One of my other favorite things to do is to cook a whole chicken in the crockpot.  I sprinkle the birth with spices and put it on low while I'm at work.  I then use that chicken for many recipes.

    I have a crockpot book at home that has some great recipes.  Remind me and I'll bring it to the next GTG for you to look at!

  • Have you made salsa chicken?  You just put your chicken breasts in the crockpot with a jar of salsa.  I also add in a can of black beans and a can of corn (after the chicken has cooked, and just heat the corn and beans through in the crockpot).  When you get home, shred the chicken and use in tacos, burritos, quesadillas, or just serve over rice.  I've done the same thing using spaghetti sauce instead of the salsa and served over pasta, it's also really good.  Cooking the whole chicken in the crockpot works well too.
  • If you like pulled pork or pulled beef sandwiches, buy the cheapest roast you can find at the grocery store and toss it in the crockpot with half a bottle of barbecue sauce and a little water. I usually add some lemon juice and brown sugar too, but that's not really necessary.

    I do a different version of salsa chicken- throw the chicken breasts in, pour a packet of taco seasoning over that, mix together 1 cup of salsa and a can of cream of chicken (or cream of cheddar) and then pour that mixture over the chicken. I usually do that on low.

    I love the idea of adding beans and corn in at the end. I'll have to try that!

  • This recipe for white chili is realllly yummy. I know you said you didn't want a lot of prep time, but you can always boil the chicken beforehand (maybe at another time you may be boiling chicken) and just shred and freeze. I do this a lot.

    You need 1 pound of boiled shredded chicken, 2 cans chicken broth, 2 cans rotel (I do one hot and one normal-we like it a little spicy), 2 cans green chili sauce, 2 cans great northern beans, and 2 cans chopped green chilies. Put everything in the crock pot, cook on low all day. Top with cheddar cheese, crushed tortilla chips, and sour cream.

    YUM!

     

  • I do chili in the crock pot alot.  This is the recipe I use and no one even knows its vegetarian!

    Oh Boy--Soy!  Crockpot or not Chili

    1 c chopped onion (I just use a whole onion)

    2 1/2 c water (I do a little more--like 3 maybe)

    4 cloves of garlic, minced (I add more garlic too--6-7 cloves maybe)

    1 tsp. oregano

    2 tbsp. chili powder (I use 1 because I don't like spicy food)

    1 tsp cumin

    1 can (28 oz) tomatoes chopped, with liquid)

    1 can (4.5 oz) mild chopped chilis (I leave these out too)

    1 1/2 c dry textured soy protien (sometimes I just textured vegetable protien instead)

    1 can (15 oz) yellow soy beans, rinsed and drained

    1 can (15oz) black soy beans, rinsed and drained (I don't use soy beans, I just use 2 cans of whatever beans I have--usually black and kidney)

    1 (6 oz) can tomato paste

     

    Put everything in the crockpot and cook on low for at least 8 hours

    Also, taco soup is easy.

    1 can corn, not drained

    1 can pinto beans, drained

    1 can fat free refried beans

    2 cups salsa

    5 oz can of chicken (optional)

    1 can chicken broth

    put all in crockpot on low

    If I cook a whole chicken, I do that in the crockpot too.  I just peel back the skin and sprinkle the meat with salt and put the skin back on and into the pot it goes all day.  Then it seriously falls off the bone.  So yummy!

    We don't really like stews much, but I know stews work really well in the crockpot too.
