I hate CSA's

Not really.  I actually think they are great.

But they really stress me out.  I picked up a friend's bc she is out of town.  So now I have a bushel of random crap PLUS about a bushel every other day from my own garden.  

I told DH that all he allowed to eat is vegetables until the fridge is empty.  I am canning salsa tomorrow which will help a tiny bit.  I think I better freeze beans too, bc I already have about 20 pints of dilly beans.  I need to use up:

Romaine

Carrots

Parsley

A billion zucchini

Brocolli

Beans

Kale

Chard

Cabbage

Corn

and probably more that I am forgetting.

  • I totally understand!  i don't have my own garden to add to it but I'm  always worried about letting things go to waste.  I will say that every thing I make now has got veggies thrown in just so I can use them.  I guess in the end it is the best for us.  I just have a bit of a learning curve since this is our first year.

  • That's how I was the first year of our CSA. It didn't help that ds was a newborn (and very colicky) and I literally had no time to cook.

    I'm a crazy person when it comes to food waste. If I were you I'd be freezing the broccoli, beans, corn and carrots.

  • when things come in like crazy I usually freeze whatever I can easily. There are many things you can freeze without blanching. I made a list on my blog:

    Yup.  It's also called "open freezing."  It keeps things like broccoli or strawberries from freezing together into one unappetizing lump.  I spread everything out on a baking sheet so they're not touching, and set the whole sheet into our chest freezer.  Once the produce is frozen, I put them in Foodsaver bags.

    SuperGreen described it well. One thing I recently learned is that you can use parchment paper to separate layers. Worked great when I had 10 lbs of blueberries because I don't have that many cookie sheets LOL. 

  • We're having a similar problem. I have to be super diligent to eat it all fast enough and I too find myself throwing veggies into random dishes. I've learned to eat the carrots right away too or else they go limp fast.

  • A tip: my grandma would always put carrots and celery in ice water for awhile and that would crisp them up again.

  • I'm swimming in zucchini too but I just shredded a few in the food processor and froze it.  It can be defrosted to make zucchini bread or other dishes as needed.
