vegetarians, please come in!

We have a couple coming over to our house on Saturday for a BBQ - the guy is an old friend of Ben's, and neither of us have met his wife. They've just moved here and we're having them over for a late lunch to welcome them to the area. His wife is a vegetarian and I'd like to make something nice for her to have while the rest of us scarf down BBQed meat like cavemen. I'm unimaginative and can only think of things like portabello mushrooms, marinated eggplant and maybe zucchini (all grilled) - we'll also have salad, but I'd like to be able to offer her something a bit more interesting if I can. What's a favorite dish of yours that's (relatively) easy to make?

  • That's very nice of you to consider her dietary needs.  I'm also drawing a blank...  I usually do marinated veggies (peppers [or capsicum for you, ha!], zucchini, etc).

    Maybe there is an easy recipe out there for a veggie burger, using stuff like mushrooms, nuts, that kind of thing?  Here are a few from about.com

    I've heard of grilled polenta dishes, but have never actually made them...

  • not a vegetarian, but we don't tend to cook a lot of meat...

    are you planning on grilling only?  if not, MH and I love this roasted veggie baked pasta - and it's great b/c you can make it in advance (a bit annoying to prep, but not hard, just takes a little time - which isn't ideal for you, admittedly), then just pop in the oven before you want it! 

    this deconstructed pesto pasta also sounds good and seems a little "fancier", though i've never made it. though i'm not sure how easy it is for you to get good basil right now in the winter?

    eclaire's orzo pasta salad is also on my to-try list.

    this barley risotto with eggplant and tomatoes is also yummy (look!  not a pasta!  but again, not really in season...sorry, i'm all about summer food right now)

    or what about some sort of black bean curry or chili?  i like the pasta/risotto bent though, b/c it could be a side for everyone else - doesn't shout "here's the thing we made separately for the vegetarian!" quite as loudly.

    ...if you're planning on griling only, hrm.  veggie kabobs?  corn on the cob?  (in addition to your other ideas)  asparagus?  (again, not in season, argh...)

    does she eat fish?  (not technically vegetarian, but many ppl who do still call themselves vegetarian!)  grilled salmon or tuna would be great.  

    eta: oh yeah - veggie burgers!  yum. and you can buy some good ones (i like morningstar, if you have them, but even boca burgers aren't bad) if you don't want to deal with making them.

     

    aside - i love veggie burgers with bacon.  real conversation:

    me in restaurant: can i get the bacon cheeseburger, but with a boca patty?

    waitress: sure! ...do you still want the bacon?

    me: yes please.  <in my head, rolling my eyes: um, obviously - that's the whole point!!>

    hope you, ben and the twins are doing well-love the pictures they are sooooo cute.

    as a vegetarian when we grill i generally just do veggies-love portobello mushroom burgers they are my favorite-i know i am not helping out here but honestly you are a new mom with twins most veggies are happy with an assortment of grilled veggies, some salad and a starch like quinoa or brown rice-sorry if i am not being more helpful.  oh and my favorite-cauliflower- cut up put in foil drizzle with olive oil sea salt pepper and some red pepper flakes-wrap put on grill cook till carmelized and yummy then drizzle with balsamic vinegar.  if you are grilling eggplant babaganoush (not sure on spelling is another fav)

    Ooooh Alix this sounds really good! Is it a little spicy from the red pepper? Apparently she likes things "a little spicy, not a lot, just a little." Stick out tongue
