Ok ladies, I have been put on a gluten and dairy free diet for 30 days to get my GI problems under control so do any of you have any good recipes to share. This actually comes at a good time since my cruise is about 45 days away so this is just what I need to shed the last few lbs I wanted to lose for it.
TIA for your recipes!

Re: Gluten Free
I can get you some for sure!
I'll see if my mom can email me some of her recipes, or the sites/boards she uses. She has pretty severe Celiac's so she's been GF for quite awhile now, and dairy free in the recent months as well.
Thank you! The dairy isn't too hard to do as you can replace non dairy products in a lot of products pretty easily but the gluten free is going to be a stuggle...I didn't know how much gluten I ate...especially in my fruits.
It's honestly insane when you start looking at labels!
FI and I had a really hard time finding frozen veggies without gluten in the ingred. list when my mom came down here for a couple weeks. I was like, are you kidding me?!
There's a few grocery places that have a good variety of GF stuff, whole foods is the only one I can remember off the top of my head. I've seen things here and there that are GF in Basha's, but they don't have them all in one section I don't think. There's one GF store kind of close to me that we found had the bread and things that she really said was good. The brand name is Udi's. The rice bread is like 5 times as heavy as "regular" bread usually and not that great, but this stuff tasted more like "real" bread she said. LOL Of course it's like $4 a loaf that's half the size of regular bread.

^They were really helpful too when I went in there and wasn't sure what to really get. The guy there gave me a lot of good information, and good suggestions that my mom ended up really loving. They have a ton of dairy free too.
Let's see... there's this place: Gluten Free Creations Bakery - They actually supply a lot of things to the restaurants that have GF options (pizza dough, breads, desserts) Barro's and Spinatos...
GFC Bakery and Good Food Caf? is located at 7607 E. McDowell Road, #108 - Scottsdale, AZ 85257
A lot of restaurants have GF options, but you have to ask for the GF menu in most of them.

There is a great list at that site.
Also, one last thing... Starbucks has these AMAZING Valencia Orange cakes that are GF and Dairy free... my mom and I both loved those, so I know they were good. LOL!
I bought her a whole case of them once and she was giddy for a month.
A few links from my mom...
http://www.livingwithout.com/
http://www.thewholegang.org/gluten-free-dairy-free-blogroll/ (TON of blogs and sites with recipes, and a lot of good info on that site as well)
http://forums.delphiforums.com/celiac/ A forum that she had has been really helpful and informative.
My mom is spamming me with messages as she thinks of stuff now. LOL!
I know it's a lot of info, and can seem overwhelming at first, but it's pretty easy to get used to it!
She says:
Any meat is okay, except if she eats chicken, she need to make sure that if it's injected with broth( some is) it needs to be GF.
Any sausage, deli meats, anything with anything besides just the meat needs to be checked.
If she's going to be "totally" GF, she needs to clean all her utensils, dishes, and counters and cupboards- cross contamination is a bear.
As far as the dairy free, any recipe she uses she can sub any soy, almond or lactaid milk in equal amounts.
The GF is more complicated, just because there is gluten in so many things. tell her to read labels....wheat rye, barley all out.
malt is always barley.. beer is out..
malt vinegar is out.. if it's distilled, probably ok.
The cross contamination thing is huge really if you can't have even traces of Gluten. If your DH uses the same butter as you and butters bread and sticks the knife back in... now the butter has gluten in it, if he lays his sandwich on the counter or cutting board... on and on. I don't know how strict your Dr. wants you to be, but just in case, it's something to keep in mind.
Technically my mom has a severe enough case (literally, possibly deadly reactions to it) that she's not even supposed to use the same utensils or cookware that my dad does. She has her own butter tubs, her own silverware, her own pots and pans, cutting board... designated space on the counter, the whole works.
You're safe with fruits, hun!! There's no gluten there! Think of it more as in any baked goods, breads, pastas, etc. But there are TONS of GF alternatives to all the things you like! Sprouts is a great place to shop as they have a huuuuuge amount of GF products, so you can still get pasta, breads, goodies, etc, without breaking your diet. We often have GF days or buy GF products cuz I honestly think my H would be better off without it! But he's unwilling to give it up 100%. [:-P] We're already almost dairy free (we do organic sour cream and chedder cheese!), and you're right, that part of the easy stuff! Good luck!
