  • Mon- leftover pork roast, and roasted veggies tues- grilled turkey sausage, corn on the cob and salad we'd beef tips and whole wheat noodles and steamed broccoli thurs-chicken stir fry with brown rice fri- tacos, with refried beans and corn/avacado salad sat- leftovers sun- burgers, salad and grilled corn on the cob dh has been asking for some of his 'old' favorite so I try to mix them in. So I'm attempting his mothers beef tip recipe this week , wish me luck! ;)

  • I haven't planned mine yet but it will include lots of grilling outside and using the crock pot because our AC is not working and I don't want to make the house any hotter by using the oven or stove top.

    Finally decided on a menu and went to the grocery store.

     Mon- blue cheese turkey burgers

    Tues-crock pot country ribs and sweet & sour green beans

    Wed-Steaks, grilled potatoes, wedge salad

    Thurs-crock pot pork chops and potatoes


  • stir fry with orange sauce and brown rice (just bought frozen stir fry veggies and panda express orange sauce at costco - will mix that with cubed chicken pieces)

    ground turkey tacos with black beans 

    slow cooker bbq chicken sandwiches with side of caesar salad

    tarragon turkey burgers with garden salad & sweet potato fries

  • Can I just say that I'm impressed with you all that cook every night during the week?!? I work late at least two nights a week (as I know you do do Shan), so I try to cook a lot on Sunday then have leftovers or stuff you can throw together for the other nights. I'm also impressed, Risa, that you can get your DH to eat the whole wheat pasta! Mine won't touch it!

    So this week I cooked Tamale Pie and Creamy Pasta Salad and we will have leftovers all week. I also have stuff to make Caprese sandwiches and frozen pizza as backup.

    Recipes (forgive me that they are double spaced, I don't know why it insists on doing it when I enter.)

    Tamale Pie:

    Ground beef (or meat of your choice)

    1/2 each Red and green bell peppers

    1/2 onion

    1 Can pinto beans

    1 Can diced fire roasted tomatoes with green chilis

    box of cornbread mix (and whatever else that brand calls for to make it)

    1-2 cans of green chilis

    1. Brown meat then drain
    2. Add chopped bell pepper and onion and saute
    3. Add beans and tomatoes and simmer while you make the cornbread
    4. Make cornbread according to directions on the box then stir in the chilis
    5. Pour over the top of the meat/veg mixture and bake according to cornbread box's directions

    I served it this week with leftover grilled veg. Yum!

    Creamy Pasta salad- so simple!

    Saute halved cherry tomatoes, chopped zuchinni and basil leaves while pasta cooks (I like little shell shaped ones)

    Mix cooked pasta with ricotta then fold in the veg

    DONE! Savory when hot but also good cold as a pasta salad.

  • Sarah, every time I try to sneak whole grain pasta in, DH wrinkles his nose. He'll eat it but reminds me he doesn't like it. I can't taste a bit of difference!

    Last night we had some steak that was on sale at HEB (steak for 2 people for $5.50? yes, please!) with green beans and pesto pasta.

    Tonight: BLTs

    Tomorrow: KA chicken tacos I believe, except this time, I'm making my tortillas 

    Wednesday, probably leftover tacos

    Thursday: Chicken breast (if I remember to defrost) with pasta and a veggie, probably corn and green beans

    Friday: I'm going out, he's on his own!

    We have so much time, and so little to do! Strike that, reverse it.

    Tues: bar food - going to happy hour :)

    Wed: panko-crusted tilapia w/ broccoli.

    Thurs: bar food - fancy happy hour @ Tre Wilcox's restaurant :)

    Fri: roasted tomatoes w/ shrimp and feta

    Was also going to make fresh cacio e pepe linguini w/ pan-seared chicken but may have to save that for next week since we'll be out so much and out of town this weekend.

     That's why I make stuff in the crock pot. Sometimes I work till 9 or 10 so I'll do a meal in the crock pot before i got to work. Then DH has something ready when he gets home and I have leftovers for lunch the next day.

    1.  We eat laaaaaate.  Way too late, I'm sure for those healthy people in the world.  When I get home on an early night (at 7pm) I'll walk in the door and immediately start dinner so we'll eat around 7:30pm or so.  On a traditional night, I'm home around 8pm, and we eat at 8:30 or 8:45 at night.  It's terrible because I'm always staaaaarving by then and I swallow my food whole.

    2.  DH won't eat whole wheat pasta unless I cover it in some kind of sauce, so he doesn't notice when I put it down in front of him.  And then he always makes it known he does not like it. 

    3.  Thankfully, all the things on my list can be prepped and cooked in about 30 minutes.  They're all really easy to do, and if it isn't easy and fast - I don't cook it.  Otherwise I'd be working in the kichen for an hour and we wouldn't eat until 9:30 at night.  That doesn't leave me a nice person!

    4.  I'm going to start going to that class again on Friday mornings starting this week.  Are you still going???  I'm a terrible gym buddy.  Terrible.  But I can do Friday mornings and I'm commiting to it!

    how funny, I JUST made this last night (but w/spaghetti) - did you happen to watch no reservations?  we saw the rome episode and it inspired me.  I used this recipe, I SPH smitten kitchen:

    If it makes you feel any better, we typically eat around 9:30, which I hate but can't help. Home at 6, feed and spend time with Rufus, head to the gym, take Rufus for a quick jog after the gym and then shower. I'm ready to start cooking around 8:45. :(  If I skip the gym, it doesn't matter. DH doesn't get home until 8 or 9 anyways.

    We have so much time, and so little to do! Strike that, reverse it.

    Yep!  That's what inspired me too.   That was a great episode.  I wanted to use fresh pasta and they didn't have fresh spaghetti at central market so I'm going to try the linguini.  I think I might try that recipe you referenced... Lupa is my fave NY Italian restaurant and I figure anything Batali must be good. :)
