Intro & Peony Question

Hi! My husband and I bought our first house last year and have been in full on garden/yardcare mode! The previous owners of our house didn't care for the yard and flowerbeds so much, so everything was in rough, overgrown shape this past spring.  We have torn out lots of half-dead shrubs, planted a small vegetable garden and have really revamped the front flower beds.  It's been a lot of work - but it's been fun!

My question is about peonies.  We have a few, only 1 of them actually flowered this year, it's going to take some TLC to bring them back to life.  I read that we should remove the peony seed pods, to allow the peony to use it's energy on the plant itself, not the seed pods.  What is the story with this, and if I should be removing the seed pods, do I just clip the remaining part of the "flower head" off, do I cut the entire stalk off, or what?  Any guidance is appreciated!
