Freeze or Can?

What do you do with your extra garden vegetables?  This is my first year as a gardener so I need some advice.  Which do you prefer...freezing or canning?

  • I can all tomatoes and freeze everything else. I probably should have canned the green beans, but I canned so many tomatoes that I didnt have the resources to keep up with the green beans.

    I don't have a pressure canner & that is required for low acid fruits/veg (unless you're adding acid which is usually only the case with pickling veg).  Plus, I prefer the taste of frozen corn, field peas, etc.

    I also freeze shredded zucchini (for bread later on), grilled eggplant & zuc, oven dried tomatoes, etc. 

  • Thanks for the help ladies!  Um, this may sound like a dumb question...but how do you can?  This is my first year so I am clueless.  I also don't have a pressure canner...yet (maybe will get one for next year).  Are there any guides online that you know of that have canning instructions?

    Canning is totally a science, so DEFINITELY get reputable directions & recipes.  You CANNOT just wing canning recipes like you can cooking...the pH needs to be just right so bacteria can't grow.

    I recommend the Ball Complete Guide to Home Preserving or the Ball Blue Book.  It's got an intro chapter discussing what equipment you need & step-by-step instructions for sterilizing jars and processing-- both in a pressure canner & boiling water bath (I just do boiling water baths.  You can use any stock pot for it).

    If you like doing jams, chutneys or pickles, I've got some recipes in my blog (link in sig).  (Actually, I don't think I've put the pickle recipe in yet...)
