re: WFD? Yum or no?

So I'm trying to think of something to use my japanese eggplants that came in my BB Asian Pack that's easy and maybe not so asian as we've had a lot of asian style food so far this week.

I came across this Rachel Ray recipe for quick-fake-out-stuffed-eggplant.  It got good ratings but I haven't cooked with eggplant much so while the ingredients sound good, I'm not sure how it would all taste together.  WDYT?
