    1 1/8 cups old-fashioned oats
1 1/8 cups packed light brown sugar
1 1/2 cup walnuts (5 oz),?toasted, cooled, and finely chopped
    1 1/2 teaspoons cinnamon
    3/4 teaspoons salt
1 1/2 sticks (3/4) cup unsalted butter, cut into 1/2-inch cubes and softened

Stir together flour, oats, brown sugar, walnuts, cinnamon, and salt in a bowl, then blend in butter with your fingertips until mixture forms small clumps.

Peel and core apples and cut into 1/4-inch-thick wedges, then toss with lemon juice, granulated sugar, and flour in a large bowl. Transfer to baking dish, spreading evenly.

Crumble oat topping evenly over apple mixture and bake until topping is golden and apples are tender, about 45 minutes. Cool slightly and serve warm.

    Cooks' note:
Crisp can be baked 4 hours ahead and kept, covered, at room temperature. Reheat in a preheat 350?F oven until warm.?

  • Okay, so there it is. ?I made a few modifications. ?I didn't bother to pre-toast the walnuts or finely chop them for that matter. ?I just used the standard bagged chopped walnuts from the baking aisle. ?I also added about a 1/4 cup of craisins to the apple mixture. ?It came out awesome!

  • Sorry I wasn't around earlier. One of those times when the BOARD SEARCH FUNCTION would be great if it ACTUALLY WORKED! (ahem, nest gods)

     :)

    Mizz Bethany's recipe is.....

    Filling

5 to 6 cortland or granny smith apples, peeled, cored and cut up into chunks

1/2 cup sugar, 2 tsps. lemon juice, 1 tsp. vanilla, 1 and 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, 1/4 tsp salt.

Mix ingredients in the baking dish, oval 2 quart Corningware dishes are perfect or you can use an 8 in.

    Topping

1 stick unsalted butter, 1 cup firmly packed light brown sugar, 1/4 tsp salt, 1 cup flour, 1/3 cup oats

Melt the butter in a saucepan and remove from heat, add sugar, salt, flour and oats and mix until just incorporated.  It should look like cookie dough.  crumble over filling and bake at 350 for 50-60 mins until bubbly.

Notes: I microwaved the butter because I?m lazy, and I also baked it for 40-45 minutes before removing it because it was bubbly, so check your ovens!

  • I'm probably going to go to Demeritt Hill Farms in Durham on Monday with a moms group.....
