Man, it's really hard!
To find a decent wheat free cake recipe. My mom found out recently that she's "gluten intolerant" and has cut all wheat out of her diet. Well today is her birthday and I wanted to bake her a cake but some of these recipes I am finding are crazy. I think instead I am making her no bake cookies, easy and no wheat and I know she likes them.

I understand that one, my Mom is a vegan and we always have to make sure things are dairy and egg free or at least warn her so she doesn't eat stuff those things. It's a PITA!
I have a friend who runs a gluten free website, they should have some recipes and tips on there that may work for your mom .

A lot of what I was finding was gluten free AND vegan and some were sugar free too... and while I don't mind buying the special flours, she can have eggs and butter and sugar.
I know there are a couple of brands of gluten free cake mixes but she like chocolate cake and can't have the artificial chocolate flavoring because that upsets her chrons.
My boss made some awesome vegan chocolate cupcakes with vegan buttercream frosting a couple of weeks ago. The only real difference I could tell was the frosting was a little more dense than regular butter cream.
Pamela's cake mixes = awesome!!!! And I think their chocolate version is flavored with cocoa powder, not artificial flavoring.
If you want to try something other than choc. though, I made some GF cupcakes by using Pamela's vanilla cake mix, adding in some lemon juice & zest, then filling them with raspberry preserves and topping with a lemon glaze. They were pretty darn easy and were a big hit!
