herb growers...

do you freeze your herbs at the end of the season? All of my plants are all still going strong but being in upstate NY, we are not far from frosty nights (sadly). This is my first year with a garden, so I was wondering if any of you pick herbs towards end of the season and freeze them for fall/winter use?

  • i freeze leafy herbs (basil, parsley, etc) and dry woody herbs (oregano, sage, thyme, rosemary, etc) or herb that I would use in tea (mint, lemon balm, lemon verbena, etc).

    When I freeze, I take off the leaves & pack them into muffin tins with just enough water to cover.  Then I freeze, pop them out of the tins (which are about 1/4 c) and put them in a freezer back.  That way, I have preportioned amounts to use in sauces, soups or stir-fries.
