yum! making squash soup for dinner

It's my super easy recipe with onion, roasted garlic, chicken broth and butternut squash.  Cook the onion in a little olive oil until tender, then add one of those large cans of chicken broth, and the cut up squash.  I then added the roasted garlic (four or five pieces that were roasted prior).  To top it off, a little salt, pepper, mexican chile powder, and chipotle chile powder.  Once the squash is tended we used our little bure mixer and mix until smooth.  Make sure you cool the soup before trying to puree it.  Reheat and serve.  I am serving mine with beer bread.

  • Mmmm.. that sounds good!  We are having steak w/ a dry rub, corn, potatoes and for dessert I made Heathers apple crisp!! 
  • we had modified apple crisp at the station on Friday night.  DH cored apples then put oatmeal, brown sugar and and butter in each one.  Then we baked them until they were soft....ohh so good!
