Critique my menu please

I normally just lurk over here but DH and I are hosting a pumpkin carving party for our family and friends this year... We will be inviting about 50 people, but expect around 30-35 to come.  I would love to keep things as make ahead as possible because I tend to make a huge mess in the kitchen when I cook!  I feel like we are missing something/ am too carb loaded and need another veggie but I am at a loss... Also, should I add another main dish type item?  Maybe mostaccoli or hot ham and cheese sandwiches?

So far I have:
Italian Beef
Hashbrown Casserole
Baked Beans
Broccoli Salad
Chips

Pumpkin Bars
Cupcakes
Cookies

  • As long as you have meat eaters I'd just keep with the beef.  The pasta doesn't go with the other sides and the sandwiches would be a pain.  What about some green beans or glazed carrots to add?

    One other thing, I'd be sure to have coffee and hot spiced cider.

  • I'm not familiar with Italian beef.  Does it have strong flavors that might be a turn off to some people or is it super common in Chicago and everyone loves it?  If you think some people may not care for it, I love the idea of hot ham & cheese sandwiches.

    Baked beans might be hard to eat while perched (I'm thinking not all 30 guests will be seated at tables...?), so I'd be ok taking those out.  What about a vegetable medley dish?

    I'd probably remove one of the desserts.  I've been entertaining a ton lately and the desserts are always rarely touched.  (And I'm a sweets lover, so I SO don't understand! lol)

  • Oh you totally have to serve hot cider!

    I'd also add a few more grab-and-go foods.  Pumpkin carving is an awesome idea but it will also get messy and perhaps take a long time, depending on how intricate people get.  Have a few snacks (just chips & dip, maybe shrimp or sausage balls) that can just be picked up and popped in the mouth without utensils or a plate.

    I thought about adding a cooked veggie, but I am afraid of it getting cold.  With DH's (large)family, events tend to be more of an open house style of event. 

    We don't have any vegetarians, but I am afraid about not knowing people that don't eat beef...  The hot ham and cheese sandwiches I make come together really easy,  I use a recipe similar to this one Soo good!  Maybe I will nix the beans and add in the ham and cheese?  They are little sliders so that would also help satisfy the 'grab and go' suggestion as well.  I am hoping that SIL's will offer to bring something (they usually do) and I will suggest they bring some kind of apps/finger foods, but will plan a few in case they don't offer.
