I know this isn't really a "green" question but...
Do any of you ladies have a recipe book or website you would recommend for vegetarian recipes?
I would try over in "What's Cooking" but usually I don't get many responses.
TIA!

I love the Moosewood series of cookbooks. Simple Suppers or New Classics are my favorite!
Vegweb.com has tons of great recipes. They're user-uploaded though, so they're pretty simplistic. I have several books by Robin Robertson - my favorites right now are The Carb Conscious Vegetarian and Fresh From the Vegetarian Slow Cooker.
Most recipe websites like the Food Network, Cooks.com, etc. have a vegetarian option in the search function. You have to be careful though, sometimes they throw in something that's not vegetarian unless you buy a specifically vegetarian or vegan brand, like Ceasar dressing.
Actually, it IS a 'green' question! Eating vegetarian, even just some of the time, means a much lower impact on the earth!
I love to use www.whfoods.com or www.vegparadise.com (highest perch archives) to learn about a specific vegetable and check out their recipes. (example for kohlrabi http://www.vegparadise.com/highestperch24.html )
There are a lot of great vegetarian cookbooks, and I find the library to be a great resource. Have you tried yours? Sometimes it can be hard to find the vegetarian section so I usually search on the online library catalogue and reserve them.
I haven't checked this one out yet, but it looks good http://www.goodreads.com/book/show/141051.Vegetarian_Cooking_for_Everyone
Another on my to read: http://www.goodreads.com/book/show/1587362.How_to_Cook_Everything_Vegetarian
I think this one is great, highly recommend!http://www.goodreads.com/book/show/923852.A_Year_in_a_Vegetarian_Kitchen
Also on my to read: (not fully vegetarian) http://www.goodreads.com/book/show/684127.The_Flexitarian_Table
www.vegetariantimes.com, the website for Vegetarian Times magazine, is the largest source of vegetarian recipes. I make tons of their recipes all the time. The Curried Lentil Soup is particularly awesome.
I also use the following cookbooks:
How to Cook Everything Vegetarian
A Year in a Vegetarian Kitchen
a ton of Moosewood cookbooks
Local Flavors by Deborah Madison
My husband and I went vegetarian/vegan about a month ago. (Vegan at home and vegetarian if we go out to eat). We are loving it so far and are feeling healthier.
My mom, (who is a huge meat eater) bought us "The Vegan Table" by Colleen Patrick-Goudreau. We have made a lot of the recipes in there and they are delicious. (I thought it was so sweet of her to jump in there and support our decision...I was expecting some resistance!)
I also got some recipes off of the Vegetarian Times website.
Good luck!
