Acorn Squash!

I made some amazing baked acorn squash tonight, and I plan to serve it for my mother's birthday dinner next month, so I thought I'd share it with you guys... maybe you could jot down the recipe for Thanksgiving or another fall event you might be hosting:

Purchase 1 acorn squash for every two people (I guess you could stretch it to three, but I did halves.) Choose an acorn squash that is dark green and heavy and has a patch of orange on it. (That's how you know it's ripe)

You'll need:
-Acorn squashes
-cinnamon
-honey
-allspice or nutmeg
-brown sugar

Cut the squash in half and scoop out the stringy stuff and the seeds- I used a grapefruit knife to do this, it worked well.

Use a knife to cut lines into the squash, cutting through the flesh but not the rind, then turn and cut another set of lines so it looks like a grid. 

shake cinnamon and allspice or nutmeg into each half

Pat brown sugar into each half, making it stick to the walls

Drizzle a small amount of honey into each half

Put on baking sheet, bake for 1 hour at 350 degrees.

I served mine in bowls but you could use plates, to see the outside of the acorn squash as well. Or clear bowls!

YUM! Your kitchen will smell delicious, too!
