Hmmm, need a little help here. Was thinking about creating some form of a lasagna noodle ruffle but with chicken filling inside. I'm thinking my food processor would shred the chicken into a finer form, but what can I mix it with? Cream Cheese, spinach, and _____, then rolled up and baked with an alfredo sauce over the top? What spices would work with that?

You'll probably get more replies on What's Cooking. I do this with ground turkey, but you can easily sub ground chicken. I'd either do the ground chicken or poach the chicken and shred. The food processer will probably give more of a baby food texture.
Anyway, I saute onions, garlic, and ground turkey. Then I mix that with ricotta, some parm, an egg, italian seasoning, and fresh broccoli. You could easily sub spinach, but I'd go for the frozen.
Straight up alfredo may be too heavy. I'd either go marinara or a mix of equal parts marinara and alfredo.
I'd do ricotta, mozzarella, parm and a beaten egg with your chicken and spinach. I'd add thyme, oregano and/or sage. Ditto pp about adding sauteed onions and garlic.

Yeah, baby food chicken does not sound good. I would cook the chicken in the crockpot on low for 6-7 hours and it will be so soft and tender that it shreds itself.
The rest of the recipe sounds good to me! And the alfredo sauce may be heavy, but you could lighten it with low fat milk... no need to mix it w/ marinara if you don't prefer that.
This is typically what I do except, I use basil instead of the other herbs mentioned. It's really good with the sauteed onions (they get nice and sweet and add a great level of flavor with the other ingredients). Also, mushrooms are really good with the mixture.
As for shredding chicken in the processor....I wouldn't do it. Just shred the chicken with a fork; it comes out better and is pretty easy to do if it's cooked right.
