Sorry for the delay! I didn't get on at all since I left work yesterday and I have been in meetings all morning!
OK, so there's no real recipe. It was one of those "make it up as I went along" things to use up the leftovers and have something quick for lunch.
Matt had made spaghetti on Thursday night for dinner, so I took all the noodles and cut them up into managable sized pieces (we used linguine noodles Thursday). I also took a whole onion and a yellow bell pepper and chopped and sauteed them in a little bit of olive oil. I combined the noodles, sauce, onions, and peppers all together until well-coated with the sauce. Spread it evenly in a baking dish. Then I topped it with 8 slices of 2% american cheese. Covered with foil and baked on 350 for 30 minutes. Voila! Spaghetti casserole.
NOTE: We didn't have enough noodles to fill the dish, so I cooked a little bit more spaghetti (1/2 of a box and broke the uncooked spag in 3 pieces).
It was pretty good, if I do say so myself. And we have four individual servings that I put in the freezer for lunches going forward. So leftovers from the leftovers...yay!
