What are you after?  An open house with apps and drinks is always successful.

Most people don't really do anything "cute" or themed.  Like pp said, you could do an open house with apps and drinks.  Or you could so something at night and have an actual party with food, drinks, games.  When I bought my last house, I did that.  People came, I showed them around, etc. and then we hung out in the garage...I had tables set up out there with a full spread of food/drinks.  I had a tent outside with heaters and we drank, partied, played games...it was fun.  You don't have to be that elaborate but you do something like that as well.

i want something simple, we aren't having one huge housewarming, but a few different times when people can come out

One cute thing we did for our house warming- We put "Before" photographs in every room, since we changed a lot after we moved in. That way, people could see our efforts and see and appreciate the changes we made! Another couple did this too, and also listed what changes they made and what changes they still have to make, like a check off list with some things still not checked off- that was cute too!

Wine and cheese parties are always fun during a house warming!

Just get a variety of whites and reds, an assortment of crackers and cheese and you are good to go.
