I have roughly a one hour window between the time I get home and the time I have to leave for class on T/TH. I need some ressypees that can be made ahead (either the day before or frozen) and easily reheated in less than 20 min, so I can eat real food before I teach. Any suggestions?

I try to cook at least one big thing on the weekend that will make enough leftovers for a meal or two during the week. For example, I'll cook a whole chicken, or a pork roast, and have chicken salad or burritos with the leftovers. Or, cook an extra steak on a night you have time to cook, and eat it cold on a salad on a night you need a quick meal.
Here are some things I always keep in the freezer for when time is short: soup, tomato sauce, frozen shrimp.

I like to make a big pan of something-stuffed shells, chicken enchiladas, pulled pork-and either reheat it through the week or freeze smaller portions and bake.

I just reheat in the microwave for the next few days.
Ditto everyone on the weekend cooking for weekday leftovers.
I just made a lasagna last week and after cooling it, cut it into individual portions which I froze for quick reheating later.

I have a potroast in the crock pot right now! Mmmm.
Fallin, do not fear the crock pot. The crock pot is your friend. I always check to make sure there isn't anything within a foot of it on the counter just to be safe.
I need to invent a crockpot that is also a refrigerator, so that I can put together a meal the night before, leave it on the counter, and it will automatically switch to cook mode at a preset time the next day. Yes, I realize I could just put the crock in the fridge but this would be even better.
