I have a lot of music saved on my hard drive and when I transfer it to my iTunes, many of them don't contain the album name, genre, etc.
I like to sort my iPod by genre or album name, etc. Thus, I've been manually going into iTunes, clicking on each song, and updating the information (album name, genre, etc.) However, my biggest fear is that I'll update the music info on iTunes and if my computer crashes, all my updates are gone since I updated it on iTunes (and not on my hard drive where the music is originally found). Thus, I feel I should be updating my music info on my hard drive, but I don't know how to add album name, genre, etc.
Am I making sense?

I think you're looking for something like MP3Tag - http://www.geektonic.com/2007/07/tag-your-music-files-with-mp3tag.html
It lets you add all the metadata to the file itself rather than its listing in iTunes, so when you import it into iTunes on another computer or device all the info is with the file.
