My dad's coming for dinner.
Any ideas of a quick weeknight dinner, that's still somewhat nice?
It should be somewhat healthy, as he's obese, high blood pressure, diabetic with high cholestoral.

Moroccan Style Stuffed Acorn Squash
I had to sub a few ingredients I didn't have when I made it, but it was tasty and fun since it was eaten out of the acorn squash bowl. Easy to make and healthy, but it does take time to roast the squash first. You could pair it with an easy soup, I think I mentioned this one in the soup thread but I've made it twice now because it was so easy: Curried Carrot Soup.
You could always do a crockpot chili for an easy, healthy come home to dinner too. A couple healthy versions: Turkey Chili, Vegetarian Chili (we usually add more spices to that particular recipe - chili powder, cumin and red pepper) or Corn and Chicken Chili.

Pumpkin chili. The pumpkin and ground turkey make it a healthier option to traditional chili. Add some good bread, and I think that would make for a nice week-night dinner.
Thanks for the tips! This was sprung on me at the last minute -- i thought he was coming in the morning to drop off/pick up stuff, not staying at my house for dinner/spending the night.
I didn't realize this until I was alreaady at work.
I'm going with the stuffed squash, since I got some last week in my co-op and need to use them up.
