Why are they only eating the yellow mums? I thought nothing ate mums! My flower bed looks so weird now.
Any advice to keep them away?

We've had similar problems - except they ate every single one our tomatoes, a watermelon, and now bulbs!
I bought deer-off, and that works for a day or 2, but then wears off - and since it's expensive, I'm now trying my own concoction of water and cracked pepper corns in a spray bottle and spraying it over the area we have bulbs planted.
When planting your bulbs, lay some chicken wire over the area you planted the bulbs and add mulch. You could also sprinkle pepper in the holes around your bulbs.
I just found a link that discusses how to deter squirrels.
A couple of years ago, the squirrels decimated my yellow marigolds. They popped the tops off of them, but didn't eat them. I think they think it is something more tasty. I sprinkled chili powder in the bed and that seemed to help. Liquid Fence also works, but is pricey.
In the new house, we have a ton of squirrels. They eat my tomatoes, apples and pears and decimate my bird feeder, but have left my bulbs and other plants alone (except for digging in an empty petunia planter). I plant all of my bulbs about 6 inches deep and think that helps deter digging.

I plant all bulbs with cayenne pepper. Dig the hole, put the bulbs in, put in a good sprinkle of cayenne pepper and voila... squirrels stay away!
I've seen them dig 1/2 inch holes.. then they smell the pepper and they don't dig any further.
