Howdy dooooo ladies! It's been a while
Anyhoodles, we've been busy busy busy so I totally forgot to post my menu last week...so you get a 2-4-1 this week!
I see some new faces here, that's awesome! I hope the board livens up a bit...it's been soooooo slow lately.
Monday: The best darn slow cooker potato soup *ever*!;
Tuesday: Leftovers;
Wednesday: Spaghetti and meat sauce;
Thursday: Leftovers;
Friday: Open faced steak sandwich w/ fries and steamed veg;
Monday: Cajun Pork Chops w/ baked potatos and green beans;
Tuesday: Baked Shells w/ Peas Parm and Pancetta;
Wednesday: Leftovers;
Thursday: Pulled pork sandwiches w/ beans and coleslaw;
Friday: Leftovers.
Slow Cooker Potato Soup
1 cup cubed ham
4 cups chicken broth
1 package scalloped potatos (can be cheesy or whatever you like best)
1 small onion, diced
1 tsp each salt and pepper
2 tbsp flour
2 cups milk
1 cup shredded cheddar cheese
Add ham, broth, potatos, onion and salt and pepper to slow cooker. Cook on low for 6-7 hours. Mix flour into milk. Add milk mixture and cheese to soup and cook on low for 30 minutes. Serve with a dollop of sour cream!

I made the cajun pork chops, they were excellent! I changed a few things, I didn't have the garlic powder so I used minced garlic and I mixed the butter in with the seasonings. I baked them, they were a little spicy but delicious!
