I used to make one called "Company Mac & Cheese" that had a variety of cheeses and spicy mustard in it. My mom adores it, and actually made several batches for my sister's baby shower years ago.

Well, when I made deep fried mac and cheese, I used this recipe:

In my pre-deep frying/freezing taste testing I discovered that the mac & cheese was amazingly delicious. I think because of the smoked gouda. To adapt, I would cook it as instructed up until the forming into balls and freezing part. And then I would top it with some bread crumbs and cheese and pop it in the oven for a bit to get a yummy crusty top. And then I would eat it. And then I would be happy forever.
