Super easy cookies?

Anyone have any recipes for shortcut cookies?  I decided on a cookies and cocoa Christmas party even though I really don't have time to host this year, so I'm trying to think of quick cookies to whip up.  I'm also trying to keep my costs down and limit the quantity I order from a bakery.

My favorite shortcut thing is to make box brownies and spread Andes mints on top when they're hot out of the oven.  The brownies taste exactly like Girl Scout Thin Mints!  I figured I'd cut those up into pretty diamond shapes.  So anyways, that's the kind of level I'm thinking of.

  • These are super easy and quick cookies for the holidays, and they are yummy

    Fudge Crinkles

    box Betty Crocker? SuperMoist? devil's food cake mix
    1/2
    cup vegetable oil
    2
    eggs
    1
    teaspoon vanilla
    Powdered sugar
     
     
    1. Heat oven to 350?F. In large bowl, stir dry cake mix, oil, eggs and vanilla, using spoon, until dough forms.
    2. Shape dough into 1-inch balls. Roll balls in powdered sugar. On ungreased cookie sheet, place balls about 2 inches apart.
    3. Bake 10 to 12 minutes or until set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store tightly covered.
    Makes 2 1/2 dozen cookies
     
     
    To make cookies the same size, measure 2 tablespoons dough to shape into balls or use a small ice-cream scoop. Measuring the dough before shaping will make cookies about the same size and ensure that cookies in a batch are done at the same time.
     
    For Chocolate Chip Fudge Crinkles, stir 1 cup miniature semisweet chocolate chips into the dough.
     
    Substitution
    In place of the vegetable oil, you can use 1/2 cup butter or margarine, softened.
  • Peanut butter cookies

    1 can condensed milk; 3/4 cup peanut butter; 2 cup Bisquik; 1 t vanilla.

    Mix together, roll in balls, smoosh and bake at 325 for 8- 10 mins.

    To make Peanut Butter Blossoms roll in sugar first, don't smoosh, but add a kiss after you take them out.

    Not cookies, but these are great muffins.  To make mini just bake for 15-18 mins

    One other thing to think about- make your doughs up a day or 2 before and refrigerate.  Then have one big baking party.

  • Everybody loves chocolate chip cookies!  But if you're having cocoa as well, maybe you want to do something other than chocolate. 

    Oooo! I just thought of something. Do sugar cookies, and whip up some frosting in different colors to let people decorate their own.

     Super Easy Sugar Cookies:

    - 2 and 3/4 cups all-purpose flour

    - 1 tsp baking soda

    - 1/2 tsp baking powder

    - 1 cup butter, softened

    - 1 1/2 cups white sugar

    - 1 egg

    - 1 tsp vanilla extract

    Preheat oven to 375?F.

    Stir together dry ingredients in a small bowl. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients.

    Drop dough in balls on an ungreased cookie sheet.

    Bake 8 to 10 minutes, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks. 

     

     

  • Oreo truffles are pretty easy if you have a good sized food processor.  Just throw in the oreos and grind them up.  Use your hands to mix in a block of cream cheese and roll in into balls.  Refrigerate (or freeze for 30 min) and then dip in chocolate.  I use the chocolate wafers so I can just pop them in the microwave.  Once I have chocolate melted I usually dip other things like nuts and pretzels as well.
  • A box of cake mix of your choice, 1 egg, and 4 oz. of cool whip. Mix together, shape into balls and roll in powdered sugar. Flatted with a fork on a greased cookie sheet, bake no more than 10 minutes at 350. These are super easy and delicious.
  • I like the idea of cooking sugar cookies and letting people decorate them.  

    Really, any drop cookies are pretty easy to make.  Here is a recipe for one of my favorites that is always a hit.

    White Chocolate Macadamia Monsters

    (makes 14  4&1/2 inch cookies or 40 3 inch cookies)

    Position a rack in the center of the oven and preheat the oven to 325 degrees. Grease cookie sheet or cover with parchment paper.

    Beat on medium speed until very fluffy and well blended:

    2 1/2 sticks unsalted butter, softened

    1 1/2 cups sugar

    2/3 cup packed brown sugar 

     

    Beat in 1 at a time:

    2 large eggs

    Stir in:

    1/2 teaspoon vaniall

     Stir in until just combined:

    2 1/2 cups all-purpose flour

    1 teaspoon baking soda

    1/8 teaspoon salt

     Stir in: 

    1 cup macadamia nuts (I use chopped)

    1 cups coarsely chopped white chocolate

     Using 1/3 cup for each monster, drip the dough onto the sheets, spacing about 3 inches apart. Bake, 1 sheet at a time until the cookies are golden brown- about 20-25 minutes.  For regular sized cookies, drop by heaping measuring teaspoonfuls 1 1/2 inches apart and bake for 15-17 minutes. Remove sheet to a rack and let stand until the cookies firm slightly.  Transfer cookies to rack and allow to cool.

  • Cake Mix Cookies

    -Box of cake mix (any kind you choose)

    -Stick of butter

    -1 egg

    Mix together and roll into balls and place on cookie sheet. Bake 8 minutes at 350 degrees. I sometimes add sprinkles or chocolate chips for extra taste. So good and super easy! 

  • A guy I used to work with would bring in something his wife made all the time and they were incredible! Put peanut butter between 2 Ritz crackers, cover them in milk chocolate and set them in the freezer until they're firm. You've got the salty, buttery, peanutty, chocolate goodness.....OMG, delicious!!
