Hey,
I'm planning my grocery shopping for the next two weeks. Anyone have any ideas for light meals? (Not neccessarily "low fat." Meaning, meals that won't be so heavy on the stomach as the three Thanksgivings we're going to.)

We've been on a panini kick...our fave is:
Turkey, bacon, monterey jack cheese, avocado (mashed with ranch dressing)

Oooo, I've never made panini.
Any great recipes? What kind of bread do you use?
I don't really have any recipes, we mostly wing it with whatever we have in the fridge. I think the bread is the most important part--something with structure, like French bread, but thick and sliced.
Croque Monsieurs are another sandwich favorite of ours. Panini bread, sliced ham, shredded gruyere cheese dipped in egg and milk and grilled in a skillet for ~5-6 minutes. I've seen some people put dijon mustard on theirs, but I prefer it without.

I love when DH makes chicken noodle soup. It's filling enough to be a meal, but it's not too heavy. Plus, it makes a lot of leftovers for lunches. And you can use the extra carrots and onions and such in your salads.
As far as the panini-maker, I've seen Food Network stars use a pan or a griddle with a brick on top, wrapped in foil. It won't give the grill marks, but it'll do the smashing for you.

We buy individually frozen fish fillets and pan fry them w/ lemon pepper
Shred some chicken and make fajitas
