I'm not hosting Thanksgiving but I did do a fall themed dinner. For my centerpiece I bought 3 larger glass vases and 4 smaller glass vases. I put a candle in each vase and then poured acorns around them. I then took a fall berry garland and weaved it around the vases. Here's a couple of pics (unfortunately, I don't have any close ups):
I've cored out a mini pumpkin before and used it to hold a taper candle before. Just consider whether you will have all the food at the table and make sure you have enough room for the food and a centerpiece.
maybe make several low flower arrangements using pumpkins with flowers in the pumpkin. It's your last chance to use pumpkins before the Christmas decor so go for it!
