We're not doing a traditional Thanksgiving meal this year. We're having this: http://www.epicurious.com/recipes/food/views/Beef-Tenderloin-with-Garlic-Horseradish-Cream-230745 with twice-baked potatoes and probably garlic roasted brocolli. Since we're driving over 5 hours on Thanksgiving Day, I'm prepping as much as I can the day before, then we're putting everything in a cooler to take with us.
But I need a dessert ressypee. Preferably something I can make Wednesday and something that travels well. Any ideas?

Re: Ressypee help
I really want someone to make this http://www.bitchincamero.com/2008/11/thanksgiving-test-recipe-bacon-wrapped-turkey-roulade/ so I can live vicariously through them. Maybe I'll attempt it for Christimas.
What about a pear crisp?

I'm sorry, but I am distracted by garlic horseradish cream.
Will you have a cooler? If not, all I can really think of are pies. If so:

This cake improves if it sits for a day or so before serving: http://www.epicurious.com/recipes/food/views/Chocolate-Whiskey-Bundt-Cake-232636

I have nothing to suggest at the moment, but I just finished reading the potluck post on ML and now I'm cracking up at the contrast between this post and that one.
Bethie, forget this tenderloin in a fancy sauce business, just put some frozen mini meatballs in a crock pot with grape jelly and bbq sauce! YUM!
