Flexible Thanksgiving Dinners

Any suggestions on how to fix a meal for an undetermined number of people? I'm hosting Thanksgiving and I know that we'll have at least 10, probably 12, but could have up to 20....

 

Is there any possible way to plan for an undetermined amount of people-- I'm thinking it might be a good idea to have enough on hand for a couple of quick side dishes that would go along with the meal, but that no one would miss...

Or would the best bet be to have additional appetizers and desserts and hope that people fill up on those?

Whoamigaw...just reading your post stressed me out! lol

I'd say have a bunch of sides on standby.  Maybe simple things like a microwaveable bag of frozen mixed veggies in sauce, extra dinner rolls, extra cranberry.

I'm making enough for the max number I think will attend and telling people to bring to go boxes for leftovers.

Is there  no possible way to get a head count before the day?  Or even the morning of? 

If there is no way I'd just plan on 20.  I'd rather have leftovers than be scrambling last minute.

For me, I'd cook for the maximum # of people, and then be ready to send people with leftovers!

plus I feel like most sides, you have an abundance of anyways...like mashed potatoes and stuffing. I would buy enough to feed the army of 20, tday leftovers are pretty standard
