Who has an awesome stuffing recipe that you'd like to share with me? I need something that will be cooked separately from the turkey...and I need to make enough to serve 11 people.

did you not like the one I sent you last year? it could have been made w/o mushrooms
OK, here's my Mom's recipe. Warning, it's Southern (which means AWESOME but not necessarily healthy!)
1 lb roll of pork sausage (like breakfast sausage)
1 large onion
4-5 celery ribs
1/2 bunch of green onions
1/2 bell pepper
chopped/minced garlic
3 1/3 cups chicken broth (can use half broth and half water)
2 boxes Stove Top stuffing
1 stick of butter
parsley
Tony's Chachere seasoning (cajun seasoning mix....you can substitute any good spice/seasoning mix)
8 oz. jar oysters, drained and chopped (optional ingredient)
Chop all vegetables. Fry down sausage and veggies. Drain meat mixture, return to pan. Add butter and oysters (if using them). Cover and cook on low-med heat for about 30 minutes (all veggies will be cooked down and tender). Add chicken broth and heat for 10' additional. Remove from heat and Stove Top mix. Let sit about 5 minutes, until liquid is absorbed. Transfer to casserole dish and sprinkle with bread crumbs. (Optional: Can add a few 'pats' of butter to top). Bake at 350 until top is golden.
Serves about 8 people (well, at least in my family

Aw, Brandi! Another friend ended up volunteering to make the stuffing last year, so I didn't make any. I don't know if I kept the recipe...did you send it to me via email or FB, or did you post it here?

We have a calf down and I am delivering 7 piglets to new homes today so I will post it as soon as I can this afternoon
Haha!! There's no rush! Take your time with the calves and piglets!
