Stuffing Recipe

Here ya go Carrie... (and any one else that wants it)

Pepperidge Farm Stuffing mix... I use the herb seasoned cubed

1 bunch fresh spinach cut into ribbons (or 1 frozen box  thawed and squeezed and chopped)

8 oz container fresh mushrooms - sliced or diced and sauteed

1/2 of 12oz package bacon, cut into bits and fried

1 small onion, cut into small pieces and sauted until soft

2 or 3 green onions sliced

1/2 stick of butter

chicken stock

 seasonings - I use salt, pepper, garlic powder, whatever I like or am in the mood for

 Put the dry stuffing into a large bowl.  Add spinach, cooked mushrooms and onions, fried bacon bits, green onions, etc into that.  Start adding your chicken stock little by little while gently stirring to moisten dry ingredients. Add your seasonings to taste.  Once all ingredients are incorporated transfer stuffing to a casserole dish and dot butter on the top.  Put in into oven to heat. ( I sometimes prepare the day before, then refrigerate.  I usually add a tiny bit more stock prior to putting it in the oven so it isn't dry)

*** note*** mushrooms aren't required =).  I love them and use them in just about everything.  When I created this recipe, I just used my fave ingredients and it turned out awesome, so I stuck with it.  I'm sure you could mix and match other ingredients that mesh well.  Enjoy!
