all the Scandinavians out there ... sandbakkels?

I remember having sandbakkels as a kid, and I really liked them. I'm going to make a bunch of Norwegian treats for the holidays this year and want to make sandbakkels.

My question is about filling. I remember having fruit-filled sandbakkels as a kid, but I have no idea what kind of fruit. I've been googling, and all the recipes I've found just say that they can be served plain or filled with fruit. No mention of what kind of fruit. Berries? I think I remember berries. Raspberries? Strawberries? Lingonberries? Blueberries?

Any suggestions?

  • Thanks for the picture because as 100% Scandinavian I have no idea what those are...they look and sound tasty though!!

    I guess I was just the rosette, Krumkaka, lefsa, lutefisk Norweigen.  :)

  • I will be of no help.  I have never heard of a filling in them.  I have all 3 of my Grandma's recipes and none of them added a filling.  Sorry  :(
  • I just asked my Grandma about it and she said some people do add a filling but she doesn't know what it would be.  She assumed it would be the same as a pie filling type thing.  Would that make sense?

    Ditto (minus lutefisk. I've never had that).   I've never seen or heard of them!  

    I would vote raspberry but that is based on never having tasted them but just imagining in my head what they taste like.  :-)

  • they are almost like an almond cookie.  VERY yummy!!  I grew up with these!  I have the tins to make them but haven't in years!

    lol, i'm the same! and OMG rosettes... oh wow. what i wouldn't give for some of my grandma's rosettes right now. (may she RIP).

    I also asked a friend of mine (also of Norwegian ancestry) and she says that her family always eats them plain with no filling. Maybe I'm in the minority for wanting a filling.

  • My mother-in-law makes these and I love them!  So yummy. No filling though either and there has never been mention of having the option. 
  • Yeah, it looks like just fruit, no sauce or anything. Although they'd probably be good with fruit preserves too. I'll experiment.

    I've had my great-grandma's sandbakkel tins for years but have never made them before. My grandma and mom don't make them, so I haven't had them since my great-grandma died almost 20 years ago. 

    I also have her rosette irons ... I'm going to make rosettes too. Yum.

  • I have the rosettes also  :)  And the krumkake iron and roller also.  Brings back such fun memories of making this stuff with my grandmas! 
  • Yum! My grandma used to make those but no filling- just plain. Can you mail some to me :)

  • Sandbakkels are my absolute favorite Christmas cookie.  We've always had them plain, but I'm sure berries would be good as a filling.  I would do some with and some without a filling because they are so yummy on their own.

    They are time consuming to make because of the tins. It's take a bit to get the dough even in the tin and then they can be tricky to get out in one piece.  Good luck!

  • I LOVE sandbakkels!  Definitely a family cookie tradition in my family, even though we're German.  Our church has the Julotta service on Christmas morning which is Scandinavian, so maybe that's where we originally picked up the tradition.  My favorite way is plain, dunked in a cup of hot chocolate...along with ginger snaps also dunked in hot chocolate (drooling now!).  The only variation we've tried, which was delicious, was pecan filling similar to pecan pie.  I can't find any recipes which is really weird- but if I come across something I'll be sure to pass it on!

  • I've never had them, but my Mom and Grandma were just talking last year. I asked her about them and she said she remembers her Grandma putting in raspberry jelly or jam.
