Food Allergies & Cookie Swap

I was thinking of doing a cookie swap...but one of my good friends has some serious food allergies against gluten, dairy AND eggs. Her DH doesn't have any such allergies though, so whatever she would swap he would still be able to eat...

but I'd feel like an a$$ if I didn't have at least ONE thing there that she could have. Any ideas as to what I could get her/make her?

  • Does butter bother her? No-bake cookies could be safe if you use non-cross-contaminated oats (oats, sugar, peanut butter, cocoa, butter).

     

  • There are some pretty good mixes available.  I don't remember the name, but one we'v had luck with is in a red and gold or yellow bag.  It meets her dietary needs. Use energy (ener-g?) egg replacer for eggs.

    I think pb balls would also meet that requirement: the filling is pb, crisp rice cereal and powdered sugar and they are coated in melted chocolate.  You'll have to find a recipe that doesn't include the other stuff.  There may be gluten in some pdr sugar, but choose a brand that is labeled gluten free (same for the rice cereal).

  • Betty Crocker now has a GF chocolate chip cookie mix -- soy, no dairy, in the mix, and I just use an egg replacer because I myself am allergic to gluten and eggs.  I made a batch a few weeks ago and everyone was amazed at how great the cookies tasted.

    You can also take any regular cookie recipe and swap out ingredients - use GF flour instead of regular flour, soy milk or almond milk or another non-dairy milk for the regular milk, and an egg replacer.  I do this all the time.

  • The brand Pamela's makes great gluten free baking mixes that you could try, and I hear good things about the Ener-G egg replacer, although I've never tried it. I work at an organic market and people rave about it. Good luck!

  • I'm gluten, dairy, egg, and nut free. It's pretty limiting when it comes to cookies. I love to bake (from scratch, not mixes), but I have yet to find a recipe that I like.

    I have heard that Bob's Red Mill Gluten-Free Brownie Mix is awesome. I have it in my pantry and have been waiting until I remember to pick up peppermint extract and mini candy canes to crush. I think that would be a great holiday treat.

    Rice crispie treats are actually my favorite. As long as your friend isn't vegan and use use margarine instead of butter, they will work for her. I happen to love them, but I know they aren't for everyone.

    I have altered a sweet potato pie recipe to suit me. It could be made into bar cookies. PM me if you want the recipe. Not to toot my own horn, but it's amazing. My husband is an omnivore, but requests this.

    If all else fails, there's a boxed cookie company called "Enjoy Life" that does allergen-free cookies. They are pretty good, relative to allergen-free cookies. Their chocolate and gingerspice cookies are my favorite.
