Beginner Holiday baker

Hello!  I have been watching Cake Boss and am trying to do some simple cakes for the holiday season.  Does anyone know how long the cakes have to cool for, how long they have to be in the fridge with the frosting on them and then how long they have to be in the fridge with the fondant on them before I could decorate?  For the decoration I was thinking of something simple such as pearls or perhaps a simple design.

  • Cakes need to cool to room temperature.  That varies based on the temp of your house and the cake.  

    In terms of frosting, I frost at room temp.  I do not have much experience with fondant,  but with regular frosting, room temp is fine.  Leave it at room temp until the frosting has set.  Then, you can either refrigerate or leave at room temp.

  • I agree with tnrb. I usually work with my cakes at room temperature but I know a lot of people who like to work with frozen cakes and frosting (they spritz with water after taking it out of the freezer so that the fondant will stick). Anything warmer than room temp and you will have melty icing AND fondant. 

    Just a little advice - practice with the fondant first if you haven't already, it can be a real pain in the butt! They make it look so easy on Cake Boss but it is quite tricky. You don't need to freeze a cake that has fondant on it before you start to decorate it.

    I don't know if you're buying or making fondant but Satin Ice is really nice and I think that is what they use on both Cake Boss and Ace of Cakes. When I make my own it is really hit and miss. At least if you buy it you sort of know what to expect.

  • You don't want to refrigerate fondant either - the moisture will cause it to do really awful things and ruin all your work.
