Help me find a recipe for zucchini apple/cheese tea sandwiches

I'm looking for a recipe for zucchini bread sandwich filled w/ a creamy mixture of apple & sharp white cheddar. I had it at a tea shop on sat. It was delish and I'd love to figure out how to make it myself.

Anyone have mad google skills that could help me? I looked but didn't come up with much so far...

  • So the "bread" part of the tea sandwich was plain ol' zucchini bread like this? And the filling was sort of liquidy? I'm envisioning pieces of apple with melty white cheddar sauce - is that right?

    Yes. So the 'bread' that makes up the sandwich is zucchini walnut bread (your basic zucchini bread recipe - I'm good there....)

    I just need to figure out the insides. It was a cold sandwich. Not hot/melted.   It kinda looked like this:

    It seemed like jullianed (sp?) apple with shredded sharp white cheddar cheese and then mixed with creamy something (pretty sure it wasn't mayo) to make a "salad" on the insides. I also think there might have been some very small diced/sliced celery in the salad mixture. The creamy stuff had a bite to it, so I wonder if there was some sour cream or lemon juice mixed in. It wasn't sweet like cream cheese. And it didn't have that distinct mayo flavor. So, I don't know what else it could have been.

    And the plain yogurt with the lemon juice would make the 'bite' I was tasting rather than the traditional 'mayo' flavor.... 

    I think this might be it. I'll just leave out the walnuts and chicken and use apple, celery and cheese.
