One of the off the beaten path ones that I like is Christmas Wrapping by The Waitresses.
Its just such a fun song...
And everything on the Glee Christmas Album
O Holy Night and Silent Night are probably my 2 favorite religious songs, ESPECIALLY if sung by Josh Groban. His versions of those songs - actually his versions of any Christmas songs - just take my breath away. I swear the man (or at least his voice) was sent straight from heaven...
Do They Know It's Christmas is my favorite non-religious song. I know it's sad but I remember when it came out in 1981 (I think) - I was 9 years old and so fascinated that all those artists (especially my beloved Bono) came together to raise money for such an important cause.
I also enjoy the Waitresses.
I really like Christmas music in general. I think some of my favorites might be Silent Night and Away in a Manger.

That Spirit of Christmas ( as sung by Ray Charles)
I'll Be Home For Christmas - (Bing Crosy or Josh Groban's version. Josh gets points because he has real military members send messsages to their families at the beginning and end of the song)
Baby, It's Cold Outside (Just about anyone - I love this song! The recent Glee version where Kurt and that new guy sang it was pretty cool also!)

I really enjoy transiberian orchestra music (like carol of the bells)
little drummer boy with Bing and David
And the Maccabeats (acapella group) new parody of tao cruz's Dynamite called Candlelight
