Re: Shauni

  • Sure!  Its not spinach though, just artichoke.  And with the holiday parties around now, I have already had a ton of people ask me to make it!

2 cans of artichoke hearts in water (drained)

    3-4 cloves of garlic

    handful of parm cheese

    handful of mozz cheese

1/4-1/2 cup of mayo (light is fine.  just no miracle whip)

5 oz or so of cream cheese (light is fine)

mix all of the ingredients plus a dash of salt and pepper in a food processor until smooth.  pour into oven safe dish, cover, and bake at 350 until bubbly, 20 minutes?  OR if you have a mini crockpot you can put it in there and put it on high for maybe 45 minutes until it is warm and then you can turn it down.

I serve mine with crackers, but tortilla chips are good with it too!

  • Thanks.  I'm working on my Christmas menu and thought this would be great for an app.  I think I'll add a package of spinach to it.  I love having it with tortilla chips, it's so yummy.
